Soouthern Style Barbeque Pork Chops

BARBECUE SAUCE
2 teaspoons olive oil
1/2 cup finely chopped onion
1 tablespoon chopped garlic
1 teaspoon cumin
1/4 to 1/2 teaspoon ground red pepper
1 cup tomato sauce
3/4 cup water
1/4 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons packed brown sugar
2 tablespoons cider vinegar
1 teaspoon salt
1 teaspoon cumin
1/2 teaspoon freshly ground pepper
1/8 teaspoon ground red pepper
2 teaspoons olive oil
Four 1-inch-thick pork loin rib chops (6 to 7 oz. each), excess fat trimmed
1. Make barbecue sauce: Heat oil in a 3-quart saucepan over medium heat. Add onion and garlic; cook 3 to 5 minutes, until onion softens. Stir in cumin and red pepper; cook 3 minutes. Stir in remaining ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally, 1 hour. (Can be made ahead. Cool. Store in an airtight container up to 1 week. To reheat: Microwave sauce 4 to 5 minutes, until heated through.)
2. Heat oven to 350 degrees F. Combine salt, cumin, black pepper and red pepper in a cup. Rub mixture on chops. Heat oil in a large nonstick, ovenproof skillet over medium-high heat, 2 minutes. Add chops and cook 2 minutes per side. Spoon 2 tablespoons barbecue sauce on top of each chop. Bake chops 8 to 10 minutes, or until an instant-read meat thermometer registers 155 degrees F. when inserted in center of each chop. Serve chops with additional barbecue sauce, if desired.
