Bacon Cheeseburger Potato Pie

Recipe Introduction
This was awesome! Took only a few seconds it seemed and it all disappeared!
List of Ingredients
- 2 lbs. extra lean ground beef
- 1/2 c. dried bread crumbs
- 1/4 c. onion
- 1/4 c. ketchup
- 2 tsp. mustard
- 1/2 tsp. salt
- 3 slices bacon
- 1-1/4 c. water
- 3 tbsp. butter
- 1/4 tsp. garlic salt
- 3/4 c. milk
- 2 c. Hungry Jack mashed potato flakes
- 4 oz. cheddar or colby cheese
- 1 med. tomato
- 1/4 c. green onion
Instructions
- Heat oven to 375 degrees. In bowl combine hamburger, bread crumbs, onion, ketchup, mustard & salt.Mix well.
- Press in bottom and up sides of ungreased 9" pie pan. Bake at 375 for 15 mins.
- Cook bacon til crisp. Drain, cool and crumble.
- In saucepan combine water, butter and garlic salt. Bring to boil. Remove from heat. Add milk. With fork stir in potato flakes and 1/2 c. cheese.
- Remove partially baked crust from oven. Pour off any drippings. Spoon potato mix evenly into crust.
- Return to oven. Bake additional 10-15 mins. Remove from oven.
- Top with chopped tomato, remaining 1/2 c. cheese and crumbled bacon. Return to oven. Bake additional 5 mins or til cheese is melted.
- Remove from oven. Top with green onions. Let stand from 10 mins. Cut into wedges to serve.
Final Comments
I used 17% fat hamburger, and 1% milk, also fat free cheese. Weight Watchers Points 11 for 1 serving. Recipe makes 8 servings.
