Mint Brownies

List of Ingredients
- Brownies:
- 1 1/2 cups flour
- 1/2 cup + 2 Tablespoons cocoa
- 1 cup vegetable oil
- 2 teaspoons vanilla
- 2 cups sugar
- 1 teaspoon salt
- 4 eggs
- Filling:
- 3/4 cup butter
- 2 3/4 cups powdered sugar
- 1 teaspoon mint extract
- 3 drops green food coloring
- 1 1/2 cups shortening
- 3 Tablespoons milk
- Topping:
- 1/2 cup butter
- 1 cup chocolate chips (real chocolate)
Instructions
- Brownies: In a large mixing bowl, combine brownie ingredients and beat at medium speed for 3 minutes.
- Pour into an 11" x 17" jelly roll pan.
- Bake at 350 degrees for 20-25 minutes. Let brownies cool completely.
- Filling: In a medium mixing bowl, combine all filling ingredients and spread on cooled brownies.
- Topping: Put butter and chocolate chips in a microwave-safe bowl and microwave for 1 minute to melt. (Be careful not to overcook.) Stir thoroughly until smooth.
- Drizzle or spread topping over mint filling.
- Refrigerate. Cut into squares before topping is fully set to prevent cracking.
