    Makes 10 servings.

    2 cups applesauce
    1 cup dark raisins
    1 cup currants
    1/2 cup pine nuts, lightly roasted
    1/2 cup yellow cornmeal, lightly roasted
    1/2 cup honey
    1/2 tsp allspice
    1/2 tsp cinnamon
    1 (5-pound) sugar pumpkin
    1/2 cup apple cider

    In a large pot, over medium heat, combine the applesauce, raisins, currants, pine nuts, cornmeal, honey, and spices. Simmer, stirring occasionally, for 5 minutes. Set aside.

    Preheat oven to 350º. Carefully cut the top from the pumpkin, and trim and save it. Scoop the seeds and pulp out of the pumpkin cavity. Prick the pumpkin’s inner cavity with the tines of a fork, then place the pumpkin in a deep baking dish. Add about an inch of water to the dish to surround the pumpkin.

    Pour the hot applesauce mixture into the pumpkin cavity. Pour the apple cider on top, letting some run over the sides to coat the pumpkin skin. Place the top back on the pumpkin ~ lightly. Place this whole creation in the oven and bake for 40 to 50 minutes, until a toothpick stuck into the side of pumpkin meets little resistance and the pumpkin seems done. Don’t allow it to bake too long or it may start to collapse.

    Serve as a sweet side dish or as the centerpiece for dessert. Carefully remove the top. Scoop out generous portions of the pudding-like filling and serve it in dishes; you might want to enjoy it by itself or with vanilla, peach, or pumpkin frozen yogurt. Then, with a long-blade bread knife, slice and serve slim wedges of the baked pumpkin to be eaten out of its skin. The cider should have caramelized, leaving a delightful flavor and fragrance.

    This is one of the easiest, tastiest desserts, and many variations on this recipe show up around the country at Indian festivals and gatherings.

    Cranberries and blueberries are nice additions to the pudding filling in autumn. Meat and diced vegetables or just corn and beans can be the basis for the center stuffing on other occasions and in other seasons.
