Chili Rellenos
List of Ingredients
1 can ( 7 oz ) green chiles or 6 to 8 fresh green chiles
1/2 lb. Monterey Jack cheese
1 cup crushed corn flakes
Recipe
Stuff each chile with a piece of cheese about 1/2 inch wide about 1 inch shorter than chile.
Coating:
Separate 3 eggs. Beat the whites until they form soft peaks. Beat yoks with 1 Tbsp. water, 3 Tbsp flour and
1/4 tsp. salt until thick and creamy. Fold yolk mixture into whites .Heat 1-1/2 inch of oil in a wide frying pan over med. heat . Dip stuffed chiles into the batter, then roll chiles in corn flake crumbs. Slide chiles into hot oil. When the bottoms are golden brown, gently turn using
a spatula and fork. Drain on paper towels.
Serve smothered with green chile, with a side of Mexican rice.
