Three Cheese Potato Souffle
List of Ingredients
1/2 bag Ore-Ida mashed potatoes prepared
3/4 c. milk
1 Tbsp. Dijon mustard
3/4 c. shredded sharp cheddar cheese
1/2 c. shredded swiss cheese
1/4 c. parmesan cheese
3 large green onions chopped
1/4 c. yellow onions chopped
1 tsp. salt
1/2 tsp. ground pepper
3 large eggs separated
Recipe
Preheat oven to 375 deg. Add milk, dijon mustard, cheeses
green onions, yellow onions, salt, pepper and egg yolks
to mashed potatos. Mix together until well blended. In a
small bowl with mixer on high speed, whip the egg whites
until stiff peaks form. Gently fold beaten egg whites into
mashed potato mixture. Spoon the mixture into a greased 2
quart souffle dish. Bake about 50 min., or until the souffle
is puffed and golden. (5 servings)
