    List of Ingredients


    • 1 1/2 lb. ground beef(lean)
    • 1 pkg. taco seasoning mix
    • 1 green onion,finely diced
    • 2 eggs
    • 1 clove garlic,minced(optional)
    • 1 block sharp cheddar cheese,cut into small cubes


    Instructions


    1. Preheat oven to 425F. Beat eggs and mix all ingredients except the cheese together. Mold a Tbsp of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet(sprayed with Pam)and bake at 425F for 7-10 min. or until meat is done and cheese has melted.
    2. Serves 10-15 people. Less than 1 carb per meatball.
