    List of Ingredients


    • 2 tsp canola oil,divided
    • 1/4 cup chopped onion
    • 1/4 cup chopped green pepper
    • 1/4 cup sliced celery
    • 1 can (14 1/2 oz.) diced tomatoes,drained
    • 1 1/2 cups cholesterol-free egg product
    • 1/4 cup kraft 100% grated parmesan cheese


    Instructions


    1. Heat 1 tsp of the oil in large nonstick skillet on med-high heat. Add onion,peppers and celery;cook 5 min. or until vegetables are crisp-tender,stirring occasionally. Stir in tomatoes. Cook until heated through,stirring occasionally. Remove from skillet;cover to keep warm.
    2. heat remaining 1 tsp oil in same skillet on low heat. Add egg product;cover. Cook 12-15 min. or until center is set. Slide onto serving plate.
    3. Top with the tomato mixture;sprinkle with parmesan cheese.
    4. 6 servings
