Cheesy Spanish Frittata

List of Ingredients
- 2 tsp canola oil,divided
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/4 cup sliced celery
- 1 can (14 1/2 oz.) diced tomatoes,drained
- 1 1/2 cups cholesterol-free egg product
- 1/4 cup kraft 100% grated parmesan cheese
Instructions
- Heat 1 tsp of the oil in large nonstick skillet on med-high heat. Add onion,peppers and celery;cook 5 min. or until vegetables are crisp-tender,stirring occasionally. Stir in tomatoes. Cook until heated through,stirring occasionally. Remove from skillet;cover to keep warm.
- heat remaining 1 tsp oil in same skillet on low heat. Add egg product;cover. Cook 12-15 min. or until center is set. Slide onto serving plate.
- Top with the tomato mixture;sprinkle with parmesan cheese.
