List of Ingredients
- 6 large eggs
- Cooking spray
- 11/2 cups of diced tomato
- 1 Tbsp freshly chopped basil
- 3/4 cup reduced-fat milk
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup plus 2 Tbsp shredded light cheddar cheese
- 3 whole wheat english muffins,split and toasted
Instructions
- Preheat oven to 350F. Break eggs,1 at a time, into a shallow casserole dish coated with cooking spray. Combine tomato and basil. Top each egg with 1/4 cup tomato mixture. Combine milk,salt, and pepper;spoon 2 Tbsp milk mixture over tomato mixture. Sprinkle each serving with 1 Tbsp cheese. Bake at 350F for 20 min. or until eggs are set. Serve with English muffins.
