    • 1/2 cup old-fashioned oatmeal
    • 1/4 cup low-fat cottage cheese
    • 4 egg whites
    • 1 tsp vanilla extract
    • 1/4 tsp cinnamon
    • 1/4 tsp nutmeg


    Instructions


    1. Process the oatmeal,cottage cheese,egg whites,vanilla extract,cinnamon,and nutmeg in a blender until smooth.
    2. Spray a nonstick skillet with cooking spray. Add the batter and cook over med. heat until both sides are lightly browned.
    3. You can top the pancake with a low-sugar syrup of your choice.
    4. 1 serving
