    List of Ingredients


    • 2 cups cholesterol-free egg product
    • 1 cup low fat cottage cheese
    • 1 cup chopped green pepper
    • 1/2 cup chopped onion
    • 1/2 cup reduced fat shredded mild cheddar cheese
    • 1/2 cup thick and chunky salsa


    Instructions


    1. Beat egg product and cottage cheese in small bowl with wire whisk until well blended.
    2. Spray med. nonstick skillet with cooking spray. Add green pepper and onion;cook on med-high heat 2-4 min. or until tender,stirring occasionally.
    3. Add egg product mixture and cheddar cheese. Reduce heat to med. Cook 8-10 min. or until set,stirring frequently. Serve topped with salsa.
