Spicy Tomatillo Scramble

List of Ingredients
- 2 1/2 tsp canola oil,divided
- 1 med. tomatillo,papery skin removed and chopped into 1/4-in. dices
- 1/2 small onion,diced
- 3 large eggs,lightly beaten
- 2 Tbsp med-hot salsa
- Salt and freshly ground black pepper
Instructions
- Heat 1 1/2 tsp of the oil in a med. skillet over med-high heat. Add tomatillo and onion. Reduce heat to med. and cook,stirring frequently,until vegetables are softened and lightly browned,about 4 min. Remove vegetables from skillet.
- Heat remaining oil in the same skillet over med. heat;add eggs,reduce heat to low,and allow eggs to set, 2 min. Sprinkle vegetables over eggs,season with a pinch of salt and pepper,and scramble until just cooked,about 1 min. more. Serve with salsa.
