    List of Ingredients


    • 4 large eggs
    • 2 large egg whites
    • 1 cup spinach,baby leaves,chopped
    • 2 Tbsp scallions,finely chopped
    • 1/4 tsp table salt
    • 1/4 tsp black pepper
    • 1 serving cooking spray(5 one-second sprays per serving)
    • 1/2 cup light or nonfat cheddar cheese


    Instructions


    1. Preheat oven to 400F. Beat together eggs and egg whites in a large bowl;stir in spinach,scallion,salt and pepper.
    2. Coat a 12-in. ovenproof nonstick skillet with cooking spray;heat skillet over med. heat. Pour egg mixture into skillet and cook until partially set,about 5 min.
    3. Sprinkle cheese over eggs. Bake in oven until cheese softens and eggs firm up,about 5 min. Remove from oven and let stand 1 min. before cutting into 8 wedges.
    4. Yields 2 pieces per serving
