Spinach and Cheddar Frittata

- 4 large eggs
- 2 large egg whites
- 1 cup spinach,baby leaves,chopped
- 2 Tbsp scallions,finely chopped
- 1/4 tsp table salt
- 1/4 tsp black pepper
- 1 serving cooking spray(5 one-second sprays per serving)
- 1/2 cup light or nonfat cheddar cheese
Instructions
- Preheat oven to 400F. Beat together eggs and egg whites in a large bowl;stir in spinach,scallion,salt and pepper.
- Coat a 12-in. ovenproof nonstick skillet with cooking spray;heat skillet over med. heat. Pour egg mixture into skillet and cook until partially set,about 5 min.
- Sprinkle cheese over eggs. Bake in oven until cheese softens and eggs firm up,about 5 min. Remove from oven and let stand 1 min. before cutting into 8 wedges.
- Yields 2 pieces per serving
