Tomato and Herb Frittata

List of Ingredients
- 1/2 cup chopped plum tomatoes
- 1/4 cup chopped scallions
- 3 basil leaves,chopped
- 1 Tbsp I Can't Believe It's Not Butter! spray
- 1 cup liquid egg substitute
Instructions
- Coat an ovenproof 10 in. skillet with cooking spray and place over med. heat until hot. Saute the tomatoes,scallions,and basil in the butter until tender. Reduce the heat to low. Pour the egg substitute evenly into the skillet over the mixture. Cover and cook for 5-7 min. or until cooked on the bottom and almost set on the top.
- Transfer the skillet to a broiler and broil until the top is set,2-3 min. Slide onto a serving platter and cut into wedges to serve.
