Grilled Mahi Mahi

List of Ingredients
- 1 lb. mahi mahi,fresh or frozen
- 2 tsp olive oil
- 2 tsp lemon juice
- 1/4 tsp salt
- Fresh ground pepper to taste
- 2 cloves garlic,minced
- Capers(optional)
Instructions
- Cut the mahi mahi into 4 serving-size portions. Brush both sides of the fish with the olive oil and lemon juice. Sprinkle with salt and pepper,then rub the garlic on the fish.
- To grill,arrange the fish on a grill rack or use a grill basket that has been sprayed with an olive oil cooking spray. Grill over med-hot coals for 4-6 min. per 1/2 in. of thickness,or until the fish flakes easily when tested with a fork. If the fish is more than 1 in. thick,gently turn it halfway through grilling.
- To broil,arrange the fish on the rack of a broiler pan that has been sprayed with an olive oil cooking spray. Broil 4 in. form the heat for 4-6 min. per 1/2 in. of thickness,or until the fish flakes easily when tested with a fork. If the fish is more than 1 in. thick,gently turn it halfway through broiling.
- To serve,top the fish with capers,if using.
