Oven-Roasted Shrimp with Salsa

List of Ingredients
- 1/2 lb. roma tomatoes,diced
- 1 onion,peeled and diced
- 2 limes,juiced
- 1 jalapeno chile,seeded and minced
- 1/2 tsp ground cumin
- 1 1/2 lbs. of large shrimp,peeled and deveined
- 2 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 450F. In a 13X9X2-in. baking dish,combine tomatoes,onion,lime juice,jalapeno and cumin;mix well.
- Toss shrimp with oil,salt,and pepper. Evenly spread out shrimp atop tomato mixture. Place in oven and cook until shrimp are pink and salsa is hot,about 8 min. Turn halfway through to ensure even cooking. Serve warm.
