List of Ingredients
- 1 small green pepper or mild New Mexico chili,diced
- 1 small onion,diced
- 1 tsp minced garlic,or 2-3 fresh cloves
- 1 tsp olive oil
- 1-2 cans of red kidney beans,drained
- 1 cup water
- 2 Tbsp chili powder or taco seasoning(may adjust to taste)
- Low fat mexican blend cheese for topping
Instructions
- Saute the onion,pepper and garlic in a small saucepan. Add the kidney beans,water and seasoning and simmer on low-med. until it has cooked down and the sauce is thick(about 10 min.). Serve topped with a sprinkle of Mexican blend shredded cheese.
