    South Beach Diet Phase 1


    List of Ingredients


    • 1 small green pepper or mild New Mexico chili,diced
    • 1 small onion,diced
    • 1 tsp minced garlic,or 2-3 fresh cloves
    • 1 tsp olive oil
    • 1-2 cans of red kidney beans,drained
    • 1 cup water
    • 2 Tbsp chili powder or taco seasoning(may adjust to taste)
    • Low fat mexican blend cheese for topping


    Instructions


    1. Saute the onion,pepper and garlic in a small saucepan. Add the kidney beans,water and seasoning and simmer on low-med. until it has cooked down and the sauce is thick(about 10 min.). Serve topped with a sprinkle of Mexican blend shredded cheese.
