Balsamic Chicken with Tomatoes and Swiss

- 2 tsp olive oil
- 2 boneless,skinless chicken breast halves,about 5 oz. each
- Salt and pepper
- 1 med. shallot or 1 small onion,finely chopped
- 1 cup diced canned tomatoes
- 1/2 cup reduced-sodium chicken broth
- 1/4 cup white wine
- 2 fresh thyme sprigs
- 1/4 cup balsamic vinegar
- 4 oz. (about 1/2 small bunch)Swiss chard leaves,coarsely chopped
Instructions
- Preheat oven to 350F. Warm oil in large heavy ovenproof skillet over med-high heat. Season chicken with salt and pepper. Brown breasts,about 3 min. per side;transfer to shallow plate. Reduce heat to med-low; add shallot and cook 1 min.,stirring.
- Increase heat to med-high;add tomatoes,broth,wine and thyme. Bring mixture to a simmer,stirring with a wooden spoon to release browned bits from bottom of the pan. Let simmer 5 min. Stir in vinegar.
- Return chicken and any plate juices and vinegar to skillet;place in oven and cook 5 min. Turn breasts;cook an additional 5 min. until chicken is cooked through.
- Remove pan from oven;transfer chicken back to plate and tent with foil to keep warm. Place skillet over med. heat. Add chard to balsamic sauce and cook 5 min., until wilted,gently stirring. Remove thyme sprigs. Return chicken to skillet to warm through.
- Serve chicken in shallow bowls;topped with sauce.
