Blue Cheese Chicken Rolls

List of Ingredients
- 1 cup crumbled blue cheese
- 2 Tbsp bread crumbs
- 2 Tbsp nonfat sour cream
- 1 pkg. (10 ozs.)frozen chopped kale,thawed and drained
- 1 Tbsp canola oil
Instructions
- In a small bowl,combine blue cheese,bread crumbs,and sour cream. Mix well.
- Prepare kale according to package directions. Set aside and keep warm.
- While kale is cooking,prepare chicken rolls. Spread cheese mixture evenly over each cutlet. Starting with a short end,tightly roll up cutlets jelly-roll style. Secure each rolled cutlet with a toothpick.
- In a large skillet,heat oil over med. heat. Add chicken rolls;cook,turning frequently,until no longer pink,about 10 min. Spoon kale onto a large serving platter,arrange chicken rolls on top. Serve immediately.
