- 4 chicken breasts
- Low sodium soy sauce
- Lemon juice(bottled is easier,but squeeze fruit if you prefer)
- Garlic powder
- Onion powder
- Ginger powder or grated ginger
Instructions
- Preheat oven to 425F.
- Place chicken pieces in a roasting pan skin side up(leave skin on-you can remove it later).
- Splash lemon juice over the chicken-leaving you with about a 1/4 in. of juice in the bottom of the pan.
- Splash soy sauce over the pieces so each piece gets some,now with about a 1/2 in. of juice in the pan.
- Shake the 3 spices over the pieces-top only-they will be nicely covered when you are done and the sauce will be flavored just by shaking the spices over the chicken.
- Check the chicken after 30 min. You want the top skin to be dark brown in color. Then tyrn the pieces over and either cook for 10 more min. or just turn off your oven with the chicken inside. Turning it over leaves it juicy and the flavors all mingle with the chicken.
- When you remove from oven leave chicken pieces face down in sauce until serving-it will keep it very moist.
