Cucumber-Tomato Salad

List of Ingredients
- 1 seedless cucumber,centers scooped out and thinly sliced
- 1/3 cup grape tomatoes,halved
- 2 2/3 Tbsp thinly sliced red onion
- 1 1/3 Tbsp tarragon or other flavored vinegar
- 2/3 tsp artificial sweetener of choice
- Red pepper flakes to taste
- Pinch of salt
Instructions
- Combine first 3 ingredients in a bowl. Seperately, combine vinegar and remaining ingredients in a small bowl;stir with a whisk until artificial sweetener is dissolved. Pour vinaigrette over cucumber mixture;toss gently to coat. Cover and refrigerate 1 hour.
