    Jalapeno Chicken Salad

    South Beach Diet Phase 1

    List of Ingredients


    • 1/3 cup diced celery
    • 1/4 cup finely chopped green onions
    • 1/4 cup regular or low-fat mayonnaise
    • 1 Tbsp dried parsley flakes
    • 1 Tbsp fresh lemon juice
    • 1 pickled jalapeno,seeded and chopped fine
    • 1 (2 oz) jar roasted red pepper,diced small
    • 2 (6 oz) packages grilled chicken strips,chopped
    • 1 bag prewashed salad greens
    • Salt and pepper to taste


    Instructions


    1. Combine the first seven ingredients in a bowl and mix well. Season to taste with salt and pepper. Stir in chicken;cover and chill. Add chicken mixture to salad greens.

    2. 2 servings
