List of Ingredients
- 2-3 romaine lettuce hearts,cut into 1 in. pieces
- 1 red bell pepper,cut into 1 in. pieces
- 1 cucumber,thinly sliced
- 1 med. tomato,cut into eighths
- 1/4 cup red onion,thinly sliced and cut into 1-in. pieces
- 1/4 cup extra-virgin olive oil,firs cold-pressed
- 1/4 cup very fine red wine vinegar
- 3 tsp Romano cheese
- Salt
- Freshly ground black pepper
- 1/4 cup canned chickpeas
Instructions
- Place the romaine hearts,bell pepper,cucumber,tomato, and onion in a salad bowl.
- Combine the olive oil,red wine vinegar,cheese,salt and pepper in a screw-top jar and shake well. Drizzle the dressing over the salad. Add the chickpeas and toss well.
