    List of Ingredients


    • 2-3 romaine lettuce hearts,cut into 1 in. pieces
    • 1 red bell pepper,cut into 1 in. pieces
    • 1 cucumber,thinly sliced
    • 1 med. tomato,cut into eighths
    • 1/4 cup red onion,thinly sliced and cut into 1-in. pieces
    • 1/4 cup extra-virgin olive oil,firs cold-pressed
    • 1/4 cup very fine red wine vinegar
    • 3 tsp Romano cheese
    • Salt
    • Freshly ground black pepper
    • 1/4 cup canned chickpeas


    Instructions


    1. Place the romaine hearts,bell pepper,cucumber,tomato, and onion in a salad bowl.
    2. Combine the olive oil,red wine vinegar,cheese,salt and pepper in a screw-top jar and shake well. Drizzle the dressing over the salad. Add the chickpeas and toss well.
    3. 2 servings
