    Instructions


    1. In a skillet,bring one cup of salted water to a simmer. Add 2 boneless,skinless chicken breasts,cover,cook over low heat 5 min. Turn off heat;let steam 5 min. Shred chicken with a fork.
    2. Cut one head iceberg lettuce and 2 red bell peppers into strips;slice 3 scallions. Quarter 1 cucumber lengthwise;slice thinly. Combine vegetables and chicken;season with salt.
    3. Toss with Peanut Vinaigrette and 2 Tbsp chopped peanuts
