- 8 ozs. sugar snap peas,trimmed(2 cups)
- 2 Tbsp white-wine vinegar
- 2 Tbsp extra-virgin olive oil
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper
- 1 bunch scallions,trimmed and thinly sliced on the diagonal
- 1/2 large red bell pepper,cut into 1 1/2-in. long slivers
Instructions
- Cook peas in lightly salted boiling water in a med. saucepan until tender-crisp,2-3 min. Drain and rinse under cold running water.
- Whisk vinegar,oil,salt and pepper in a large bowl. Add peas,scallions and bell pepper;toss to coat. Serve within 1 hour.
