Tofu,Chickpea,and Sun-Dried Tomato Salad

List of Ingredients
- 1(14-oz.)pkg. extra-firm tofu,cut into 1/4-in. slices
- 1/2(1-lb.)head romaine lettuce,shredded(4 cups)
- 1(15 pz.)can chickpeas,rinsed and drained
- 4 ozs. reduced-fat feta cheese,crumbled(3/4 cup)
- 4 sun-dried tomatoes packed in oil,thinly sliced,plus 2 Tbsp oil from jar
- 2 Tbsp fresh lemon juice
- Salt and freshly ground black pepper
Instructions
- Season tofu with salt and pepper. coat a large nonstick skillet with cooking spray and heat over med-high heat. Add tofu and cook until browned,2-3 min. per side. Transfer to a cutting board.
- Combine lettuce,chickpeas,feta,tomatoes,oil from tomatoes,and lemin juice in a large mixing bowl. Cut tofu into bite-size pieces,add to lettuce mixture,and toss to combine. Season with salt and pepper to taste and serve.
- Makes 4(2-cup)servings.
