    List of Ingredients


    • 1 3/4 cups water
    • 3/4 cup quinoa
    • 1/2 cup shelled unsalted pistacchios
    • 1 Tbsp + 1 tsp extra-virgin olive oil,divided
    • 1 small red bell pepper,finely diced
    • 2 scallions,thinly sliced
    • 2 tsp white wine vinegar
    • Salt and freshly ground black pepper


    Instructions


    1. Heat oven or toaster oven to 350F.
    2. Combine water and quinoa in a med. saucepa;bring to a boil. Reduce heat,cover,and simmer until tender,about 15 min. Drain and place in a mixing bowl.
    3. While quinoa is cooking,spread pistachios on a baking tray and bake until lightly browned and fragrant,about 10 min. Cool and roughly chop.
    4. Heat 1 tsp of the oil in a small nonstick skillet over med. heat. Add bell pdpper and scallions and cook until softened,about 3 min. Add to quinoa,along with pistachios,vinegar,and remaining oiil;stir to combine. Season with salt and pepper to taste and serve.
    5. Makes 4(3/4 cup)servings
