Two Cheese Spaghetti Squash

List of Ingredients
- 1 med. spaghetti squash (3 lb.)
- 1/2 cup 2% milk shredded reduced fat mozzarella cheese
- 2 Tbsp grated parmesan cheese
- 2 plum tomatoes,chopped
- 1/4 cup chopped fresh parsley
Instructions
- Pierce squash in several places with fork or sharp knife to allow steam to escape. Microwave on HIGH 10 min. or until squash is tender,turning over after 5 min. Let stand 5 min.
- Cut squash in half. Remove and discard seeds. Use a fork to scrape the insides of the squash to form strands. Toss squash strands with cheese,tomatoes and parsley.
- Spoon squash mixture into microwavable bowl. Microwave on HIGH 2 min. or until heated through.
- 6 servings, about 1/2 cup each
