    Two Cheese Spaghetti Squash

    List of Ingredients


    • 1 med. spaghetti squash (3 lb.)
    • 1/2 cup 2% milk shredded reduced fat mozzarella cheese
    • 2 Tbsp grated parmesan cheese
    • 2 plum tomatoes,chopped
    • 1/4 cup chopped fresh parsley


    Instructions


    1. Pierce squash in several places with fork or sharp knife to allow steam to escape. Microwave on HIGH 10 min. or until squash is tender,turning over after 5 min. Let stand 5 min.
    2. Cut squash in half. Remove and discard seeds. Use a fork to scrape the insides of the squash to form strands. Toss squash strands with cheese,tomatoes and parsley.
    3. Spoon squash mixture into microwavable bowl. Microwave on HIGH 2 min. or until heated through.
    4. 6 servings, about 1/2 cup each
