Chilled Minted Cucumber Honeydew Soup

List of Ingredients
- 1 English cucumber
- 2 cups honeydew pieces(from about 1/4 med. melon)
- 8 oz. plain non-fat yogurt
- 1/4 cup mint leaves
- 2 Tbsp fresh lime juice
- Garnish:4 fresh mint leaves
Instructions
- Cut cucumber into 1-in. pieces. In a bowl,combine cucumber,honeydew,yogurt,mint leaves and juice.
- In a food processor or blender,puree mixture in batches for 30 seconds,and transfer to a large bowl.
- Season soup with salt and pepepr. chill soup,covered, at least 2 hours and up to 6 hours.
- Garnish each bowl with mint.
