    Chilled Minted Cucumber Honeydew Soup

    List of Ingredients


    • 1 English cucumber
    • 2 cups honeydew pieces(from about 1/4 med. melon)
    • 8 oz. plain non-fat yogurt
    • 1/4 cup mint leaves
    • 2 Tbsp fresh lime juice
    • Garnish:4 fresh mint leaves


    Instructions


    1. Cut cucumber into 1-in. pieces. In a bowl,combine cucumber,honeydew,yogurt,mint leaves and juice.
    2. In a food processor or blender,puree mixture in batches for 30 seconds,and transfer to a large bowl.
    3. Season soup with salt and pepepr. chill soup,covered, at least 2 hours and up to 6 hours.
    4. Garnish each bowl with mint.
