List of Ingredients
- 2 cloves garlic
- 1 med. onion,chopped
- 1 Tbsp olive oil
- 1 large can chicken broth
- 4 chicken breasts,cooked and cut in bite size pieces
- 1 bunch cilantro
- 2 small or 1 large can of corn,drained
- 2 cans recipe cut tomatoes
- 1/8 cup chili powder or 1 pkt. taco seasoning mix
- 2 cups reduced fat jack or cheddar cheese
Instructions
- Saute garlic and onions in large stock or soup ot until soft. Add broth,tomatoes,corn,chili powder,and chicken. Simmer for at least an hour. Add cilantro and continue to simmer 15 min.
- Serve garnished with cilantro and cheese.(Avocado and/or low fat sour cream can be added)
