    List of Ingredients


    • 2 cloves garlic
    • 1 med. onion,chopped
    • 1 Tbsp olive oil
    • 1 large can chicken broth
    • 4 chicken breasts,cooked and cut in bite size pieces
    • 1 bunch cilantro
    • 2 small or 1 large can of corn,drained
    • 2 cans recipe cut tomatoes
    • 1/8 cup chili powder or 1 pkt. taco seasoning mix
    • 2 cups reduced fat jack or cheddar cheese


    Instructions


    1. Saute garlic and onions in large stock or soup ot until soft. Add broth,tomatoes,corn,chili powder,and chicken. Simmer for at least an hour. Add cilantro and continue to simmer 15 min.
    2. Serve garnished with cilantro and cheese.(Avocado and/or low fat sour cream can be added)
