- 1 Tbsp olive oil
- 1 1/2 Tbsp pine nuts,coarsely chopped
- 1 lb. spinach,stemmed,washed,torn and drained
- Salt and freshly ground black pepper to taste
Instructions
- Heat oil in a large skillet over med-high heat. Add pine nuts and stir until golden,about 1 min. Add spinach,in batches if necessary,and toss until just wilted,about 2 min. Season with salt and pepper to taste.
