    List of Ingredients


    • 1 Tbsp extra viegin olive oil
    • 1 small onion,chopped
    • 1/2 cup kasha
    • 1 cup water
    • 4(8 in.)whole wheat tortillas
    • 1(15 oz.)can kidney beans,rinsed and drained
    • 1/2 head lettuce,shredded(4 cups)
    • 1 cup refrigerated fresh salsa
    • 2 ozs. shredded reduced-fat cheddar cheese(1/2 cup)
    • Salt and freshly ground black pepper


    Instructions


    1. Heat oil in a med. saucepan over med. heat. Add onion and cook until softened,about 5 min. Add kasha and cook 2 min. more,stirring constantly. Add water,cover, and cook until water is absorbed,10-12 min.
    2. When kasha has almost finished cooking,warm tortillas in the oven or microwave according to pkg. directions, Cover with foil to keep warm.
    3. Add beans with liquid to cooked kasha,stir,and cook until beans are heated through,about 2 min. Season mixture to taste with salt and pepper.
    4. Lay tortillas on a flat surface,fill evenly with kasha mixture,and top with lettuce,salsa,and cheese. Fold in the sides of each tortilla and roll up to form burrito. Serve seam side down.
    5. Makes 4 servings
