List of Ingredients
- 1 Tbsp extra viegin olive oil
- 1 small onion,chopped
- 1/2 cup kasha
- 1 cup water
- 4(8 in.)whole wheat tortillas
- 1(15 oz.)can kidney beans,rinsed and drained
- 1/2 head lettuce,shredded(4 cups)
- 1 cup refrigerated fresh salsa
- 2 ozs. shredded reduced-fat cheddar cheese(1/2 cup)
- Salt and freshly ground black pepper
Instructions
- Heat oil in a med. saucepan over med. heat. Add onion and cook until softened,about 5 min. Add kasha and cook 2 min. more,stirring constantly. Add water,cover, and cook until water is absorbed,10-12 min.
- When kasha has almost finished cooking,warm tortillas in the oven or microwave according to pkg. directions, Cover with foil to keep warm.
- Add beans with liquid to cooked kasha,stir,and cook until beans are heated through,about 2 min. Season mixture to taste with salt and pepper.
- Lay tortillas on a flat surface,fill evenly with kasha mixture,and top with lettuce,salsa,and cheese. Fold in the sides of each tortilla and roll up to form burrito. Serve seam side down.
- Makes 4 servings
