Brandy Fruit Cake

- 1 cup butter
- 1 3/4 cup sugar
- 3 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 6 eggs
- Brandied fruit starter
- 1 15oz can pineapple drained
- 1 16oz can peaches drained
- 1 17oz can apricots drained
- 1 10oz can cherries drained
- 1 1/4 cup sugar
- 1 1/4 cup Brandy
Instructions
- For starter: combine fruit and 1 1/4 cup sugar and brandy I non-metal container and stir gently. Cover and let stand three weeks, stir twice a week.
- Cake: combine butter and sugar, beat well
- combine next 6 ingredients and add to butter mixture
- Add eggs beating well after each
- Coarsley chop fruit, add 2 cups to mixture, add rest of ingredients, pour into greased and floured tube pan and bake at 350 for one hour and ten minutes. Cake will be moist. Let cool and sprinkle with powdered sugar.
