    2lbs.spuds,3eggs,1/4c.oil,1/3c.bread crumbs,1teas.salt,1 teas.baking powder,2 green onions chopped,1 c.shredded cheese.

    Oven 375*.Grease 4 12-c.mini muffin tins.Grate spuds with food processor.In bowl,whisk eggs and oil.In another bowl,mix crumbs,salt,baking powder.Blend in egg mixture.Add spuds,onions,cheese.Spoon into tins,bake 25-30 mins.
