3/4 c.soft cream cheese,12 slices pumpernickle bread,1 teas.lemon juice,1 Tbls.dill weed,2 teas.horseradish,1/2 small red onion minced,12 slices smoked salmon.Recipe
Put 2 large pieces of plastic wrap,18x12" on counter,overlapping edges slightly.Slice crusts of bread.Put 3 bread slices in a row,2" from bottom edge of plastic.Sides of bread should be touching & straight edge of bread should be facing top of plastic.Put a 2nd row of 3 breads above 1st row so sides are touching straight edge of bread lines up & touches 1st row....repeat,should form a large rectangle.Repeat with 2 more sheets plastic and bread.
In bowl mix cream cheese,lemon juice.Stir in dill,1 teas.horsey and onion.Spread 1/2 of mixture over 1 bread rectangle,trying to keep slices close together.Spread remaining over 2nd rec.Place salmon over that,cut to fit if necessary.Roll starting at bottom edge of bread,roll tightly moving fingers toward center to form log.Keep rolling lifting up plastic to help form log.Do not roll plastic into log;Plastic should be on outside only.Twist ends to seal.Fridge overnight.When ready to cut dont remove plastic.Slice into rounds.garnish with fresh dill sprig.
