BIG Ole King Cole Casserole
My husband's family has been traced back to "king Cole"of nursery rhyme fame.Yes there really was a real 'King'Cole of Irish decent.I made this casserole one night they were visiting.Old king cole was a merry old soul;and a merry old soul was he;and he called for his pipe and he called for his bowl;and he called for his fiddler three.Every fiddler had a fine fiddle and a very fine fiddle had he;then twee-tweedl-dee,tweedle-dee went the fiddlers,and so merry we will be.
List of Ingredients
1 1/2 lbs. ground beef,1 med.onion chopped,1/2 yellow bell pepper chopped,1/2 orange bell pepper chopped,1 can drained whole kernal corn,1 sm. can mild diced chilies,2 jars salsa,1 teas.minced garlic,salt,pepper,2 cans refried beans,1 pkg.shredded cheddar cheese,1 pkg.any other shred.cheese,1 can olives sliced,1 bag doritos crushed,2 pkgs.jiffy corn bread mix.Recipe
Oven 400*,20 mins. Brown burger,onion,peppers,add corn,chilies,1 jar salsa,garlic,s+p.Heat thru.In greased 12x18 pan layer;beans,1 pkg.cheese,olives,chips,meat mixture,1 pkg.cheese.Mix corn bread according to pkg.directions.Pour over top down the middle of pan.Bake.Serve with 2nd jar of salsa and/or sour cream,guacamole...This recipe is easily cut in 1/2.
