    Peanut Butter Cookies 'For Jeff '

    3/4c.peanut butter
    1/2 c.shortening
    1 1/4 c.firmly packed brown sugar
    3 Tbls.milk
    1 Tbls.vanilla extract
    1 large egg
    1 3/4 c.flour
    3/4 teas.baking soda
    3/4 teas.salt

    Recipe



    Heat oven to 375*.Combine peanut butter,shortening,brown sugar,milk,vanilla in large bowl.Beat at medium speed of electric mixer till blended.Add egg.Beat till blended.
    Combine flour,baking soda,salt.Add to creamed mixture at low speed.Mix just until blended.Drop by rounded measuring Tbls.(I use a cookie scoop)of dough 2 inches apart onto greased baking sheet.Flatten slightly in a crisscross pattern with tines of fork.
    Bake one baking sheet at a time for 7 mins.or until set and just beginning to brown.Cool 2-3 mins.on baking sheet.Remove cookies to cooling racks to cool completely. Yield:3 dozen cookies
