Batter Dipped Fish
The secret here is the peanut oil,mustard and self-rising flour.

3 cups peanut oil,2 lbs.cod fillets,1 cup self-rising flour,1/3 cup dry mustard,1 cup water,1 egg,2 teas.sugar,2 teas.salt.Recipe
Sift together mustard,flour.Heat oil to 400*.Cut fish in approx.7x2"wedges.With mixer,blend flour mix,water,egg,sugar,salt.Dip each fillet in batter,drop into hot oil.Fry til dark golden brown,approx.5 mins.Remove,drain.
