2 cups brown sugar,1/3 cup salt,2 Tbls.garlic pepper,2 Tbls. coarse ground black pepper,2 Tbls.minced dried onions,2 Tbls.celery seed or salt,2 Tbls.dry mustard.

Freezing your fish first will help to break down the meats enzymes making it easier to except the brine and speeding up the curing process. Mix all ingredients in large bowl.As this is a dry brine,no liquids should be added.You will need a large deep pan to cure fish in.Place fish in pan,coat fish heavily with brine.Cover with foil or saran,put in fridge 24 hrs.Remove fish,rince,pat dry.Sprinkle with coarse pepper,smoke to desired doneness.
