Oysters Rockefeller (For Sara)
List of Ingredients
2 dozen oysters cleaned on the half shell,rock salt,2(10 oz.)pkg.frozen chopped spinach,3 Tbl.butter,1 cup milk,3 1/2 tea.corn starch,cooked crumbled bacon,chopped green onion tops,paprika,salt and pepper.
Recipe
Fill oyster shells with creamed spinach mixture;Cook spinach according to pkg. directions using 1 cup water,remove from heat,do not drain.Add butter,stir milk into corn starch,add to spinach.Cook and stir till thickened.Heat a 1 inch layer of rock salt in large pan,arrange shells in pan.Fill shells with creamed spinach,oyster,broil under moderate heat till edges start to curl(about 10 min.)Top with bacon,green onion tops,seasonings.Pop under broiler just to heat,serve.(The rock salt is used to keep the oysters hot and upright).Variation;instead of broiling,cook in 475* oven,about 10 mins.or plump and hot.Enjoy! (this recipe can be cut in 1/2,use 1 doz.oysters,only prepare 1 pkg.of creamed spinach..)
