The making of apple butter was a traditional autumn activity in America's rural days.Whole families would gather to peel bushels of apples,which they tossed into huge kettles of boiling cider over outdoor fires.This was a day-long event,a time for socializing as well as for peeling fruit and stirring the mixture.
List of Ingredients
4 cups apple cider,4 lbs.cooking apples peeled cored thinly sliced,2 cups sugar,1 cup brown sugar.Recipe
Begin 3 hrs.ahead...In5 qrt.dutch oven over high heat,heat cider,apples to boiling.Reduce heat to med.low.Cover,simmer 10 mins.or till tender,stirring often.Force thru sieve or food mill.Return to pan.Stir in sugars.Simmer uncovered,2 hrs.or till spreading consistency,stirring often.Pour into 5 hot sterile 1/2 pint jars,leaving head space,seal.Can also add 1/8 teas.cinnamon,1/8 teas.cloves.
