1 venison roast 2-1/2-3 lb.,1/2 cup flour,1 1/2 teas.salt,1 1/2 teas.pepper,1/4 teas.nutmeg,1/4 teas.gr.cloves,1/4 teas.cayenne,1/2 cup butter,3 lrg.onions sliced,1 clove garlic crushed,2 cups tomatoes peeled quartered,2 Tbls.chop parsley,1 1/2 Tbls.worcestershire sauce,4 drops tobasco,1 1/2 cup red wine,1 cup sliced mushrooms,sour cream,currant jelly.Recipe
Cut meat into cubes,roll in flour with salt,pepper,nutmeg,cloves,cay.Melt butter in dutch oven,add meat,sear.Add onions,garlic,brown.Stir in tomatoes,parsley,w.sauce,tobasco,wine.Cover,bake 300*2-1/2 hrs.Sauute mushrooms in butter,add to stew.Top each serving with poon of sr.cream,dollop of jelly.
