Recipe Introduction
Summer sausage will keep on the shelf for one week or in fridge for 2-3 months.
List of Ingredients
5lbs.deer or elk burger(can mix with part beef or pork burger),1/4cup Morton's Tender Quick(a curing salt-and-spice mix available in grocery stores),2teas.garlic powder,2 1/2 teas.coarse black pepper,2Tbls.mustard seed,To taste;salt,dried onions,sage,celery seed,dry mustard,cumin,dried parsley,bread crumbs(for binder).Recipe
Mix all together in large bowl.Fridge for three days,mixing daily.For bulk sausage,wrap in freezer paper or use a food sealer and freeze.For summer sausage,place sausage in casings(available from butcher shops or mail order).Sausage can also be shaped into sticks and wrapped in cheesecloth.Bake at 150*for 8-10 hrs.Cut open stick in center to test for doneness.Freeze for long-term storage.
