1-2 1/2 lb.venison roast,1 med.onion sliced,1 cup oil,1/2 cup lemon juice,1 teas.salt,6 slices bacon,2 Tbles.horseradish,6 Tbles.wine.Recipe
In lrg.bowl,place roast,mixture of onion,oil,lemon,salt,cover,fridge overnight.Remove roast,wrap it in bacon.Bake 300* 2 hrs.basting with marinade.When roast is done,remove to plate,skim off fat in pan,stir in horse.,wine,serve with roast.May be thickened with flour.
