    Sweet And Sour Pork

    3 3/4 lb.pork shoulder cut in 1"cubes,3/4 cup flour,1Tbl.plus1 teas.ground ginger,1/2 cup oil,2 cans pineapple chunks drained(save juice),1/2 cup vinegar,1/2 cup soy sauce,1 Tbl.worcestershire sauce,3/4 cup sugar,1 Tbl.salt,3/4 teas.pepper,2 small green peppers cut in strips,1 can bean sprouts drained,2 cans water chestnuts drained and sliced,2 Tbl.chili sauce,white rice.

    Combine 1/2 flour and ginger in paper bag.Put in meat,shake till well coated.Brown meat in oil.Add water and saved juice to measure 1 3/4 cups liquid,stir into remaining flour.Stir flour mixture,vinegar,soy sauce worestershire in pan with meat.Heat to a boil,boil 1 min.Stir in sugar,salt,pepper.Simmer 1 hour or until meat is tender,stirring occasionally.Add pineapple,green peppers,cook uncovered 10 mins.Stir in bean sprouts,chestnuts and chili sauce.Cook 5 mins.Serve over hot rice.(variation;Leave out bean sprouts and chestnuts,substitute beef for pork.)
