2 Tbls.olive oil,6 boneless skinless chicken breasts,salt,pepper,flour for dredging,12oz.sliced mushrooms,1/2 c.marsala wine,1 cup lo-sodium chick-broth,2 Tbls.chopped parsley.
Recipe
Heat oil in pan.Season chicken,dredge.Saute chicken till browned,remove to platter.Add mushrooms to pan,season,cook till tender.Add wine,stir till caramelized bits come unstuck from pan and wine is almost evaporated.Add chicken broth,chicken,any juices on the platter.Simmer till cooked thru.Remove chicken to clean platter.Simmer broth till reduced by 1/2.Spoon sauce over chicken,top with parsley,serve.
