Dressing;1/2 cup red wine vinegar,1 teas.salt,1 Tbls.sugar,1/2 teas.dry mustard,1 teas.sweet pickle relish,1 1/2 cup vegie oil,1 1/2 teas.olive oil;3 hard cooked eggs,3 buches spinach,1/4 lb.bacon cooked crumbled,1/2 sm.onion minced,1/2 lb.mushrooms sliced.

Mix dressing,set aside.Chop eggs and add to spinach and bacon crumbs. In bacon drippings in pan,add onion,mushrooms,saute.Stir in 1 cup of dressing,bring to boil.Pour over spinach,toss.Serve with additional dressing.
