Chunky Chicken Vegetable Soup

1/2 lb.boneless skinless chicken brests,cut in 1/2" cubes,1 t.oil,1 can chicken broth,1 1/2 c.water,2c.assorted cut up vegies(carrots,broccoli,sweet red pepper)1 envelope dry Italian salad dressing,1/2c.minute rice,2Tbls.chopped parsley.Recipe
Cook and stir chicken in hot oil till browned.Add broth,water,vegies,dressing mix.Bring to boil.Reduce heat to low,cover,simmer 5 mins.Stir in uncooked rice,parsley;cover.Remove from heat.Let stand 5 mins.
