    Dahle Wheat Bread

    Source of Recipe

Submitted by Brandon Johnstun From Leonard Dahle

    Recipe Introduction

Leonard bakes a loaf of bread at the office every day. So when he offers me a hot buttered piece of bread, I eat it. This is a very good recipe.

    List of Ingredients

    Tools
    Measuring cup
Measuring spoons, 1/2 Tsp, 1 Tsp, 1 Tbl
    Large bowl
    Spoon
    Bread loaf pan
    Mug
    Towel
    Cooling rack
    Hot pad

    Ingredients

    1 7/8 C Water at 110 degrees
1/2 Tsp Yeast or 1 Packet of Yeast
    2 C Whole wheat flour
    2 C White flour
    1 1/2 Tsp Salt
    3 Tbl Sugar
    2 Tsp Honey (Optional)
    1 1/2 Tbl Powdered milk
2 Tbl Butter at room temperature

    Recipe

Serves: Me and I don't share like Leonard.
Time required: Prepare: 15 minutes Cook: 25 minutes
    Oven temperature: 400 degrees
    Difficulty: Easy

    Directions

    1. Preheat oven to 400 degrees.

    2. Start an empty dishwasher. After 5 minutes, turn it to off.

    3. Put yeast in mug with 1 Tbl sugar.

    4. Get water to 110 degrees from the faucet. This is hot tub temperature. Add some to yeast. Stir well. Let sit till yeast ferments. This shows you the yeast is alive when it grows.

    5. Mix all other ingredients in bowl.

    6. Add yeast to bowl. Stir.

    7. Add the rest of 110 degree water. Stir together. I pour 3/4 of the water in, then see if I need more. The moisture content of the flour dictates how much water is needed. You want the dough to just not stick to your floured hand.

    8. Knead the dough. Take both hands and push with the heel of your hands into the ball of dough. Pull the back edge over the dough. This forms the shape of a smile. Then turn the dough 90 degrees. This forms a book. Pull up the back edge toward you, then push down through to the back. Repeat this till the dough is shinny. That means you have developed the gluten.

    9. Clean out mixing bowl, then put dough back in it. Cover with a clean towel, and put it in the hot and steamy dishwasher to rise. If you leave the dough on the counter to rise, it is good to put some oil in the bowl and rub the dough in it to cover the dough. This is to not let it the dough skin over.
Note: Make sure the dishwasher will not turn on when you close it. You learn after the first time.

    10. After the dough has doubled, shape it put it in a greased bread pan.

    11. Put back into the dishwasher to rise again.

    12. When dough has doubled again, bake it.

    13. Half way through the baking process, turn the bread around 180 degrees to have the bread cooked evenly.

    14. It is done when the bottom makes a solid sound, when it is thumped. Take it out of the pan and cool it off on a rack.

    Serve with

Butter, honey, jam, peanut butter, and anything you want to make a sandwich out of.

    Variations

*To get a crisper crust, heat the oven at 500 degrees for 1 hour before baking bread with a cast iron skillet on the bottom next to the heating element. When you put the bread in, drop 4 ice cubes into the skillet. Half way through the baking time, add 4 more ice cubes.

*For a crisper crust, you can brush on melted butter, milk, egg wash, milk and egg wash, olive oil, or use an oil spray.

*You can add seeds, nuts, raisins that have been plumped, or any dried fruits.

*Roll out the dough and spread butter all over it. Then sprinkle with brown sugar and cinnamon. Roll it up so it fits in the baking pan. Pinch the ends closed. This will make a swirled cinnamon roll bread. This is great for french toast.

*Roll out a 6" diameter piece of dough that is 1/4" to 1/2" thick. Take this and dry fry it in a medium high heat on both sides. These are great for breakfast or as bread for a dinner meal. For breakfast, treat them like a pancake or as a breakfast on the run. Cut a hole in the center and stuff some scambled eggs and sausage with some salsa.

*This is a great way to get up first thing in the morning and make the bread in about 5 minutes. Put it in the dishwasher and by the time you are dressed, you can put the dough in frying pan. One rising will do. It will taste great, and get the rest of the family out of bed.

    *Try using a powdered honey.
