Popper Beef Burgers

Recipe Introduction
This is a great recipe for high school kids and people who like a little heat in what they eat. Try this with alot of hotter peppers from ones you make yourself. The recipe is in the appetizer section.

Ingredients
1 lb Ground beef
1/4 C Thick-and-chunky salsa
4 frozen cream cheese- or Cheddar cheese-stuffed jalapeño peppers
1/4 C Salsa con queso
1/4 C Chopped fresh plum tomato
2 Tbl Sliced olives
4 Hamburger buns

Time required: Prepare: 5 minutes Cook: 25 minutes

Directions
1. Combine ground beef and 1/4 cup salsa in large bowl, mixing lightly but thoroughly.
2. Lightly shape into eight thin patties.
3. Place one stuffed pepper in center of four patties.
4. Place the other four patties on top of the peppers. Seal the seams all the way around. Patties will be about 4 to 5 inches across and 1 inch thick.
5. Place patties on grid over medium, ash-covered coals. Grill, uncovered, 15 to 16 minutes to medium (160°F) doneness, until beef is not pink in center and juices show no pink color, turning occasionally. Take off heat on a clean plate.
6. Spread 1 Tbl salsa con queso evenly over top of each burger. Sprinkle evenly with tomato and olives. Serve with salsa, as desired.
Serve with
A spanish rice with some corn chips and fruit.
Potato salad, corn on the cob and cobbler with ice cream
Have a thick ranch dip to dip this burger in.
Variations
*Four slices (3/4 ounce each) Mexican-style process cheese may be substituted for salsa con queso; place on top of patties 1 minute before patties are done, to allow cheese to melt.
*Use a breaded popper, but you would need to deep fry or bake first.
*Add a ranch dressing powder mix to the salsa, then mix it with the hamburger.
*Use different breads and toast or grill them like sourdough.
